600 g of snow peas
1 scallion
2 spoonful of extra virgin olive oil Laghi lombardi D.O.P. – Sebino
300 g of fresh quartirolo lombardo D.O.P. cheese
pepper or – even better – 1 cm of fresh ginger or chopped chilli pepper
Ginger and chopped chilli pepper give some verve to this simple yet delicious dish, prepared with boiled snow peas and Quartirolo cheese seasoned with extra virgin olive oil DOP from Sebino lake.
Sauté the thinly sliced scallion and add the snow peas previously cleaned, cut into three pieces and blanched in boiling salted water. Add the crumbled quartirolo and the juice of 1 cm of fresh and chopped ginger or chopped chilli pepper.
This is a traditional dish in the plains of Bergamo, where “mange tout peas” – the snow peas – are highly appreciated.
