The Massimo Balduzzi farm is managed by the owner, just thirty years old, with dedication and passion, being able to count on a strong talent and on that courage – but also stubbornness – that allow him to face the daily challenges. Massimo personally deals with every aspect: he raises, selects and slaughter the garrison of the Giant Bergamo sheep to offer a product of excellence of tradition. Here, the sale is direct: from the manufacturer to the consumer, without any intermediary. Massimo Balduzzi himself deals with delivery to restaurants and taverns, in the province of Bergamo but also in Milan, of its products, packaged vacuum and individually equipped with labels and traceability data. A service that guarantees maximum freshness and preserves the high quality of the meat.
The Balduzzi farm works about three garments per week, to offer fresh meat in the various cuts. In addition, Massimo has developed over the years a series of cured meats to meet the growing requests of a refined and demanding customers also in the field of Norcineria. Here then is the sheep’s salami, the violin and the Castradina: products of ancient Orobic culinary culture that today accompany refined and classy menus, precisely by virtue of the quality of the raw material and the wise processing.
