The family-run brewery was established in the summer of 2009, producing unfiltered, unpasteurized craft beer without the addition of additives and preservatives, with an initial 1,000-liter plant equipped with 4 fermenters and maturers, which, over the years, have grown to 8, including 2 2,000-liter ones. The brewery is equipped with a photovoltaic system with which it produces more energy than it consumes and cuts expenses, pursuing a green style of business. As of 2015, production stands at 90,000 liters annually: bottles are 33 cl, 75 cl and kegs. There are numerous national and international awards, obtained through the best competitions dedicated to craft beer and also through Slow Food.
