Alfio’s Flagship Product Is Pdo Forma de Mut, A Mountain Cheese: In The Past, where of this Cheese Were Used to Pay the Rent of the Pastures. Formai de Mut Blue Cheese from the Mountain Pastures is produced in Summer, WHEREAS Rosso di Valle Cheese in Autumn and Winter. The cow are Milked Twice a Day and the Cheese is made Immediately afterwards, when the Milk is still super fresh.
