The salami and fresh meats of the “Cà del Botto” ham are produced by dedicating great attention to the search for raw materials and slaughter, which is carried out in the ownership of ownership in order to ensure the production a continuous supply of fresh slaughtered pigs, without trauma or spasms, in order to obtain soft anatomical parts, without any breaking of blood vessels. The pigs, here, respect a certain quality, of the same selected breed, of uniform weight and are raised with the most severe criteria of hygiene and naturalness. In addition, the presence of the slaughterhouse within the company allows the processing when the meats are still hot as the farmers and breeders of the area did once.
