The dessert of the Italian Capital of Culture Bergamo Brescia 2023
The Capab – Consortium of Artisan Pastry Chefs of Bergamo and the CPA – Consortium of Artisan Pastry Chefs of Brescia started a collaboration with the aim of creating a dessert that was the emblem of the Italian Capital of Culture Bergamo Brescia 2023.
Thanks to the creativity of the master pastry chefs, a recipe was created that celebrates the typical features of the two territories. The new creation combines the characteristic desserts of the two cities, Bossolà, a typical dessert from Brescia, and La Tùrta del Donizét(Donizetti cake), from Bergamo. Battito – The meeting of sweetness was born from the union of these desserts. A leavened product with a Brescian shape and a Bergamasco heart. It is made with several doughs, as for the Bossolà, of which it recalls the shape, while the filling includes candied apricots and pineapple, as for the Tùrta del Donizét.
Why Battito? In Italian battito means beat. The name was chosen inspired by the beating of a butterfly’s wings (as graphically highlighted by the initial “B” duplicated and reversed to form the wings of the butterfly, a symbol of change and rebirth. It is also inspired by the beating of the heart, a metaphor for life and affectivity: the two cities come together and become sisters to remember and start again.
The dessert was officially presented on the occasion of the Chocolate Festival, organised in Bergamo in January 2023 and in the coming days also in Brescia.
